Even winter tomatoes were delicious steeped in Grandma’s marinade.
Ingredients
3 large tomatoes
1/3 cup olive oil
1/4 cup sherry-wine vinegar or red-wine vinegar
1/4 cup finely chopped onion
2 tablespoons finely chopped fresh parsley
1 teaspoon dried basil
1 teaspoon salt
1 large clove garlic, minced
1/4 teaspoon black pepper
Lettuce leaves, optional
Directions

For salad, remove stems from tomatoes. Cut each tomato into 8 wedges.

Arrange tomatoes in a single layer in a large shallow dish.

For salad dressing, combine olive oil, vinegar, onion, parsley, basil, salt, garlic and black pepper in a small bowl and mix well. Spoon over tomatoes.

Chill, covered, for 3 hours. Line a salad bowl with lettuce. Spoon salad on top of the lettuce and serve.

For a light lunch, Grandma often served this tomato salad over a small scoop of cottage cheese. She used little bowls, spooned about 1/2 cup cottage cheese into each, then topped each serving with 3 or 4 tomato wedges. Saltine crackers or soda crackers were the usual crunchy accompaniment, or, if she had guests, melba toast.
