Question

I work from 8am to 6pm and would like to make some quick freezable meals on a Saturday for the following week. Any ideas?

Hi Anne Marie!
I know how difficult it is to make homemade dinners when working normal hours, so it must be even harder when you work such long hours! But your idea to do the bulk of your cooking on the weekend is spot-on.  Here a few tips:

–Soups, stews and casseroles are good candidates for freezing. Check out my Casseroles page, Stews page and Soups section for recipes.

–Most non-dairy pasta sauces freeze well. If you have a sauce stashed in the freezer, all you need to do is boil up some water and cook the pasta for an almost-instant dinner. Browse the Pasta section for likely sauce candidates for freezing, like Spaghetti & MeatballsRustic Eggplant Pasta and Pasta with Artichoke Hearts. And of course, my Big Batch Spaghetti Sauce is the perfect cook-and-save sauce.

–You might also want to check out my For-a-Crowd page for recipes that serve 8 or more. Many are good for eat-some-now, freeze-some-for-later dinners – like Grandpa’s Favorite Meat Loaf, Jamaican Chicken and Sausage & Eggplant Pasta.
